Ashton Thomas Alfred: Serving Joy, One Meal at a Time

From a Caribbean Village to the Heart of a Hospital Kitchen

From the book Healing Stories of Hope

If you're grateful, you'll be happy. It's all inside.

Ashton Thomas Alfred

In a world filled with ambition and achievement, sometimes the most inspiring stories are those that rise quietly—built on humility, hard work, and the simple joy of making others smile. Born in 1978 in Dominica, Ashton grew up in a humble village where life was simple, and dreams were distant but cherished.

One day, young Ashton went to see a movie and caught a glimpse of "Big Building" on the screen. Captivated, he ran home and asked his mother questions about America—about dreams, possibilities, and what it would be like to live somewhere where people could fly in airplanes.

Ashton's culinary journey began at the bottom—washing dishes at a Howard Johnson hotel. But his dream was always bigger. With unrelenting dedication, he worked his way up to become the midnight chef at an Italian restaurant. Each night after his shift, he would walk all the way home from Westchester to Pelham Parkway in the Bronx.

In the cafeteria, you'll find burgers and sandwiches named after employees—the "Margarita Burger," the "Nicole Sandwich"—each one a playful and meaningful tribute to his colleagues. When someone is short a few dollars, Ashton doesn't hesitate: "Don't worry about it. Just eat."

Ashton reminds us that joy doesn't come from accolades or wealth—it comes from making others happy, doing your job with love, and being grateful for every day.

Takeaway: Joy doesn't come from accolades or wealth.
